GET YOUR SHIT TOGETHER

  • 150g gnocchi (uncooked weight)

  • 100g chicken breast (diced)

  • 20g boursin

  • 1/2 brown onion (sliced)

  • 10 cherry tomatoes (halved)

  • 30g spinach

  • 1 serving olive oil spray

  • 1 serving salt and black pepper (to taste)

RIGhT, CHEF. YOU’RE UP.

  1. Prep first: slice the onion, dice the chicken into bite-sized pieces, halve the cherry tomatoes + get your spinach ready.

  2. Give a large non-stick frying pan a few sprays of olive oil spray and heat over a medium-high heat.

  3. Add the sliced onion and cook for 2 minutes until starting to soften.

  4. Add the diced chicken and cook for 3-4 minutes, stirring regularly.

  5. Add the gnocchi and cook everything together for another 3-4 minutes, until the gnocchi is lightly golden and the chicken is cooked through with no pink remaining.

  6. Add the halved cherry tomatoes and cook for 1 minute until they start to soften.

  7. Turn the heat down low and stir through the Boursin until melted into a creamy sauce.

  8. Chuck in the spinach and stir for 30-60 seconds until wilted.

  9. Finish with black pepper, plate up + get stuck in while it’s hot and creamy.

THE NUTRITIONIST BIT

The science behind your plate, minus the science lesson.

The chicken provides plenty of protein, helping with fullness and supporting muscle maintenance during weight loss. The gnocchi provides carbohydrates for energy, while the spinach, tomatoes + onion add fibre, vitamins, minerals and variety.

Boursin brings the creamy bit (because nutrition and enjoyment are allowed to coexist), making this a balanced, satisfying dinner that can fit nicely into your calorie deficit.
