Creamy Chicken + Boursin Gnocchi

  • 150g gnocchi (uncooked weight)

  • 100g chicken breast (diced)

  • 20g boursin

  • 1/2 brown onion (sliced)

  • 10 cherry tomatoes (halved)

  • 30g spinach

  • 1 serving olive oil spray

  • 1 serving salt and black pepper (to taste)

RIGhT, CHEF. YOU’RE UP.

  1. Prep first: slice the onion, dice the chicken into bite-sized pieces, halve the cherry tomatoes + get your spinach ready.

  2. Give a large non-stick frying pan a few sprays of olive oil spray and heat over a medium-high heat.

  3. Add the sliced onion and cook for 2 minutes until starting to soften.

  4. Add the diced chicken and cook for 3-4 minutes, stirring regularly.

  5. Add the gnocchi and cook everything together for another 3-4 minutes, until the gnocchi is lightly golden and the chicken is cooked through with no pink remaining.

  6. Add the halved cherry tomatoes and cook for 1 minute until they start to soften.

  7. Turn the heat down low and stir through the Boursin until melted into a creamy sauce.

  8. Chuck in the spinach and stir for 30-60 seconds until wilted.

  9. Finish with black pepper, plate up + get stuck in while it’s hot and creamy.

  1. Slice the halloumi. Heat a non-stick frying pan with a few sprays of olive oil spray, then cook the halloumi for 1-2 minutes on each side until beautifully golden.

  2. While the halloumi is doing its thing, slice the cucumber + spring onions and get your bao buns ready.

  3. When the halloumi is nearly done, warm the bao buns according to the packet instructions so everything is ready at the same time.

  4. Load them up with the golden halloumi, cucumber + spring onions.

  5. Squirt the chilli mayo on top of each bao.

  6. Finish with a sprinkle of poppy seeds.
